15 Minute Spring Salad

Use your quarter to five to prep a fresh spring salad with a beer vinaigrette.

Spring is the perfect time to refresh your diet with light and healthy salads that pack a punch of flavor. This 15 minute pear and goat cheese salad is an easy-to-make dish with a delicious beer vinaigrette.

Ingredients:

For the dressing:

- 1/4 cup wheat beer – we recommend Belgian Moon

- 2 tablespoons apple cider vinegar

- 1 clove garlic, minced

- 1 tablespoon honey

- 1 tablespoon dijon mustard

- 1/3 cup olive oil

- Salt and pepper to taste

 

For the salad:

- 6 cups spring mix

- 3 ripe pears, cored and sliced

- 6oz. crumbled blue cheese

- 1/3 cup walnuts, chopped and toasted

- 1/3 cup sliced red onion

Step One

Combine all ingredients for the dressing into a jar, screw on the lid and shake until combined.

Step Two

Enjoy the remainder of your beer while you prepare the rest of the salad!

Step Three

Put your washed spring mix (or greens of choice) into a large bowl and top with the sliced pears, crumbled blue cheese, toasted walnuts*, and sliced red onion.

Step Four

Just before serving, drizzle the salad with about 3 tablespoons of the dressing and toss gently to coat. Serve additional dressing on the side to taste.

*To toast walnuts preheat oven to 350 degrees and lay the nuts on a lined baking sheet, bake for 8-10 minutes or until golden brown.
