Vegan Cowboy Caviar Recipe

Say yee-haw to this tasty summertime recipe all your friends all the bbq will love. This is our take on the viral cowboy caviar recipe, with a vegan twist. For bonus points, it pairs wonderfully with our Belgian Moon Mango Wheat beer.

Step 1

You’re going to want to get all your vegetables prepared: your canned beans, tomatoes, and corn. Rinse the black-eyed peas, black beans, and corn, and chop the tomato, red onion and bell pepper as you please. Then, slice the jalapeño, removing the seeds and stems to the heat-level desired. Lastly, finely chop the cilantro, dice the avocado and juice the limes.

Step 2

Next, it’s time to make your dressing for the salad. In a small bowl, mix together lime juice, olive oil, agave nectar, and all of the spices you want! And then whisk and pour over the salad.

And that’s it! Serve with some tortilla chips and some Belgian Moon.
